Is there any other size of tires that can be used on a 2008 scionxb besides 205/55/16

Sure. But on stock steel rims you don't want to go too wide or you'll have a lot of sidewall movement in corners. Check tire rack. They have a chart that will show the rolling circumference of your standard tire vs other width/ profile options.
