I have some cathodes laying around from some old PCs and decided to install them under the dash. I would prefer for them to turn on only when the doors are open. So, can I connect them to the door sill wiring or would the cathodes draw too much current for that circuit and I should go another route? Maybe just get LEDs?

I wouldn't wire the cathodes directly to the door sill, because they only have a 2 Amps fuse on each side, which means that you have up to 24W per side. I suggest that you create another circuit, maybe using a relay that would be activated by the door sills.
But that's just my 2 cents!
